Of course it is possible to communicate with audio/video if you know both
parties addresses...
Just stream your RTP packets...
The RTP packets carry also media properties... No problem...
But that won't be SIP communication...
You have to know exact ip addresses...
Think over the case of calling a person when you know just his/her URI...
SIP is a protocol which is designed to provide not only audio/video
communication but also strong capabilities, like routing, services etc
etc...
There are too many RFCs that will convince you...
Without SIP session you can't make a SIP call by using the products on the
market...
You can write some sample applications which lets the users to make calls
without a SIP session...
But I don't think that they will be very useful...
