I would suggest starting with some of the white papers and documents  
found on the SIP Forum (host of this mailing list) website:

And then Jonathan Rosenberg's "Hitchhiker's Guide to SIP" is always a  
good place to start understanding the various RFCs out there:

I also encourage people to look at NIST Special Publication SP800-58,  
"Security Considerations for Voice Over IP Systems", which, while  
having an obvious focus on security, has several excellent "tutorial"  
chapters in the beginning that really go over SIP, H.323 and other  
technologies:

You also might find some of the graphical tutorials useful that Tom  
Cross has over on his http://www.techtionary.com/ web site.
